Planning a Drying Session From Four Numbers
A dehydrating session is easier to get right when the numbers are settled before the food is bought. Four of them cover most of it.
1. How much to buy
Work backwards from the target with the yield estimator. Five pounds of beef gives 1.25–2 lb of jerky; five pounds of sliced vegetables gives 0.25–0.5 lb; five pounds of mushrooms gives 0.4–0.6 lb.
Wanting a pound of dried mushrooms therefore means buying eight to twelve pounds fresh — the figure most worth having before you reach the market rather than after.
2. How long it will run
The drying time calculator is dominated by thickness. Quarter-inch beef strips at 145°F take 4–6 hours; half-inch at 135°F take 9.1–13.6. Berries are the long pole at 8.8–15.8 hours even sliced thin, because the skin resists.
Two practical consequences: slice consistently, because a tray of mixed thicknesses finishes at two different times; and check whether the batch will finish before you want to go to bed, since a machine running unattended overnight is a decision rather than an accident.
3. What temperature
From the temperature guide: 145–155°F for beef and fish, 165–175°F for poultry, 130–140°F for fruit, 120–130°F for vegetables, 95–115°F for herbs.
Those ranges also tell you what can share a run. Fruit and vegetables overlap; herbs and nuts sit close; meat runs alone. And for meat the dehydrator setting is not the safety step — that is a separate 160°F (beef) or 165°F (poultry) heating step, ideally before drying.
4. Salt and cure, if it is meat
The cure and salt calculator works from fresh weight. A 5 lb batch at the defaults gives 45.36 g of salt (2%) and, if you use cure #1, 5.67 g (0.25%) — close to the commonly cited teaspoon per five pounds, and corresponding to roughly 156 ppm of ingoing nitrite.
Cure is optional and is not a substitute for the heat step. More is not safer, and the calculator refuses anything above 1% outright as a guard against a mistyped number.
The order that works
Yield first, because it sets the shopping. Then temperature, because it decides what can share the machine. Then time, because it decides when to start. Then salt and cure, worked from the fresh weight you actually bought rather than the one you planned.
Written on a card before the shop, that is most of a session sorted — and it turns the day into following a plan rather than making decisions with wet hands.
And the two things the numbers do not cover
Finishing is judged by the food, not the timer — jerky that cracks but does not snap, fruit pliable without being tacky, vegetables brittle. Then cool completely and condition the batch in jars for several days, watching for condensation.

A worked example
Suppose the target is a pound of beef jerky. The yield estimator says 25–40% retention, so buy 3–4 lb of lean beef and trim it closely, since fat does not dry and shortens keeping.
At 4 lb the cure calculator gives about 36 g of salt at 2%, and 4.5 g of cure #1 if you use it. Sliced to a quarter-inch, the drying calculator puts the run at 4–6 hours at 145–155°F, after the separate 160°F heating step.
So: shop for 4 lb, allow an evening for preparation and the heat step, a working day for the machine, then cooling and a week of conditioning in jars before it is stored. Written out, the timeline is the part most people underestimate.
Keep a log
Food, fresh weight, thickness, temperature, hours, dried weight. Six fields, and after a handful of batches they are worth more than any general table because they describe your machine, your slicing and your kitchen.
The most useful column is the dried weight against the predicted range — a consistent pattern of coming in high means the batches are being pulled early, which is the failure that shows up months later in storage rather than on the day.
