General Disclaimer

General Guidance, Not Medical or Regulatory Advice
DryHarvest’s calculators — the drying time calculator, the dehydrator temperature guide, the jerky cure & salt ratio calculator, the water activity estimator, the rehydration ratio calculator, and the batch yield estimator — are designed to help you plan and understand home food drying. They do not constitute medical, regulatory, or professional food-safety advice. For anything beyond home, short-term use — especially meat, poultry, or fish jerky — confirm your process against your equipment’s manual and a current, reputable food-safety source.
Results Are Rounded Estimates
The tools apply commonly cited ratios and formulas and round their output for readability. That rounding, together with the assumptions of a deliberately simple model, means a displayed value may differ from your actual result. Always confirm doneness and safety by direct observation and, where it matters, a calibrated thermometer or meter — not by the calculator alone.
Why a Result May Look Off
A calculator can return a surprising or blank answer when:
- Units are mismatched:entering grams where ounces are expected, or °F where °C is expected, changes the answer entirely.
- Inputs describe an implausible scenario:for example, a temperature far outside any dehydrator’s real range, or a weight of zero or less.
- A food type doesn’t match your ingredient: the reference values differ meaningfully between, say, beef jerky and poultry jerky.
- A safety guardrail is triggered: the cure-ratio calculator, for example, intentionally refuses to compute a cure percent above a conservative ceiling.
