Jerky Food Safety: Drying Is Not a Kill Step
Home dehydrating is mostly forgiving. Jerky is the exception, and the reason is a single fact that a lot of recipes skip: drying is not a pathogen kill step.
This is general guidance for home food preservation, not a regulatory standard. Your national food-safety authority publishes current guidance on home-dried meat, and where it differs from anything here, follow it.
Why drying alone is not enough
A dehydrator running at 145–155°F is drying meat, not cooking it. The surface temperature of the strips lags the air temperature, evaporative cooling keeps them cooler still, and the meat spends hours in a range where bacteria can survive.
Worse, bacteria become more heat-resistant as they dry out. So a batch that reaches a given temperature at the end of drying has not received the same treatment as one heated while still moist — the drying itself has made the organisms harder to kill.
The organisms that matter here are the ordinary ones: Salmonella and E. coli O157:H7 in particular, both of which have been associated with home-dried meat.
The heat step
Food-safety guidance addresses this with an explicit heating step, and the widely published figures are 160°F (71°C) for beef and other red meat and 165°F (74°C) for poultry.
There are two common ways to do it:
- Before drying — bring the strips to temperature in the marinade (a simmer) or in the oven, then transfer to the dehydrator to finish. Heating while the meat is still moist is the more effective order.
- After drying — a short oven step at the end. Workable, and it has to overcome the increased heat resistance the drying has produced.
The temperature guide reflects this: its beef-jerky entry notes the 160°F step and then gives 145–155°F as the range for finishing the drying. Those are two different jobs, and the dehydrator range is not doing the first one.
Poultry is set higher throughout — 165–175°F — which is why poultry jerky takes longer at the same thickness: 6.5–9 hours against beef's 4–6 for quarter-inch strips.
What cure #1 does, and does not do
Cure #1 (sodium nitrite) is optional in a dried jerky recipe and is genuinely useful — it contributes colour and flavour, and nitrite is specifically effective against Clostridium botulinum.
What it is not is a substitute for the heat step. It does not address Salmonella or E. coli, and a recipe that adds cure and skips heating has covered a different hazard from the one that most commonly causes trouble in home jerky.
If you do use it, the ratio matters and the cure calculator defaults to 0.25% of meat weight — 5.67 g for a 5 lb batch, close to the commonly cited "1 level teaspoon per 5 lb". That figure is not arbitrary: it corresponds to roughly 156 ppm of ingoing nitrite, which is the level most regulatory guidance works to.
More is not safer. Sodium nitrite is toxic in quantity, which is why the calculator refuses any figure above 1% outright — a hard ceiling well above any legitimate ratio, there so that a typo cannot silently produce a dangerous number. Follow your cure manufacturer's own instructions and never exceed their stated maximum. Cure #1 is also dyed pink specifically so it is not mistaken for table salt; keep it labelled and away from children.
Water activity is about drying, not salting
A point worth being careful about, because the arithmetic invites a wrong conclusion.
Shelf-stable jerky is generally formulated below a water activity of 0.85. Run a realistic marinade through the water activity estimator — say 100 g of water with 5 g of salt and 20 g of sugar — and you get an aw of about 0.96, nowhere near the threshold.
That is not a problem with the marinade. Jerky gets below 0.85 because drying removes the water, not because the marinade is salty. The estimator describes a solution, and the finished product is a different thing entirely. Salt contributes; drying does the work.
Storage
Properly dried and cooled jerky keeps well, and the failure modes are moisture and warmth. Store it airtight, keep it cool and dark, and condition a batch for a few days — jarred and shaken daily — so any residual moisture equalises and you can see condensation if some pieces were under-dried.
Vacuum-sealing extends life and does not sterilise. For low-acid dried foods, an oxygen-free environment is exactly the condition C. botulinum prefers, so vacuum-sealed low-acid products that are not properly dried or otherwise stabilised are stored refrigerated or frozen rather than at room temperature.
Discard anything showing mould, an off smell, or condensation inside the packaging. A batch that never dried properly is not rescued by more storage.
The short version
- Drying is not a kill step. Heat to 160°F (beef) or 165°F (poultry), ideally before drying.
- Cure #1 is optional, targets a different organism, and is not a replacement for heat.
- 0.25% of meat weight is the standard cure ratio; more is not safer.
- Low water activity comes from drying, not from the marinade.
- Store airtight, cool and dark; condition the batch; discard anything doubtful.
