Dehydrator Temperature by Food, and Why
Dehydrator temperature is not one setting. It runs from 95°F for herbs to 175°F for poultry, and the reason each food sits where it does is worth understanding rather than memorising.

Two different jobs
The ranges split into two purposes. For herbs, fruit, vegetables and nuts, the temperature is about quality — low enough to preserve colour, flavour and volatile compounds while still drying in reasonable time.
For meat it is about drying rate and texture, and the guide's beef entry says so explicitly: it notes the separate 160°F heating step and then gives 145–155°F for finishing the drying. Those are different operations. The dehydrator range is not a kill step, and the food-safety guide covers why that distinction matters more than any other on this site.
Why herbs go lowest
The compounds that make a herb worth drying are volatile — they evaporate. Dry basil at 140°F and a good deal of what you wanted leaves with the water, which is why the herb range tops out around where the fruit range begins.
The trade is time. Low and slow means long, and herbs dried at 95°F in a humid room can take considerably longer than the tables suggest.
Higher is not faster in a useful way
Raising the temperature above the range for a food produces case hardening: the surface dries and seals while the interior stays wet. The piece feels done, is not, and the trapped moisture is exactly what shortens storage life.
It also cooks. Jerky dried too hot comes out brittle and crumbly rather than pliable, and fruit dried too hot browns and loses its aroma.
The temperature you set is not the temperature the food sees
Worth knowing when a batch behaves unexpectedly. Evaporative cooling keeps wet food below the air temperature for much of the drying, so early on the strips are cooler than the dial says — another reason the dehydrator setting is not a reliable pathogen treatment.
Airflow and tray position matter too. Most home units are less even than they appear, and rotating trays partway through a long batch is a cheap correction.
Mixed loads
The temptation with a full machine is to run several foods at once. The ranges make it clear which combinations work: fruit and vegetables overlap enough to share a run, herbs and nuts sit close, and meat sits on its own.
Running herbs alongside jerky at 150°F will dry both and ruin one. And strong-smelling foods share their aroma with everything on the other trays, which is a smaller problem and a real one.
Check the machine against a thermometer
Home dehydrator dials are frequently optimistic, and the difference between a dial reading 155°F and an actual 135°F changes both the drying time and, for meat, the assumptions you are making.
An oven thermometer placed on a tray during an empty run costs nothing and tells you what your machine actually does. Many units also run warmer near the heating element, which is what makes rotating trays worthwhile.
Pre-treatment changes what the temperature has to do
Several foods dry better after a step before the machine. Blanching vegetables shortens drying and preserves colour. An acid dip — lemon juice or ascorbic acid — slows the browning of light-coloured fruit. Soaking nuts before low-temperature drying is the point of that range existing.
None of these is a substitute for the right temperature, and each removes a reason to reach for a hotter setting than the food wants.
Ambient conditions matter more than the dial suggests
A dehydrator works by moving dry air over wet food, so the humidity of the room it stands in changes its effectiveness. The same machine at the same setting takes noticeably longer in a humid kitchen than a dry one.
Which is another reason the drying-time figures are ranges, and why judging the finish by the food rather than the clock is the habit that actually works.
