Rehydrating Dried Food Properly
Rehydration is the half of dehydrating that gets least attention, and the ratios vary by more than most people expect.

Mushrooms are the outlier at 4.5×, which is why a small handful produces so much in a dish and why the soaking liquid is worth keeping — a great deal of flavour has gone into it.
Ratios do not return you to fresh
Worth being clear about: rehydrated is not the same as fresh. Drying changes cell structure, and rehydrated vegetables are softer and hold less water than they originally did. The ratios describe what the dried food takes up, not a reversal of the drying.
Which is why dried and rehydrated ingredients suit cooked applications — stews, sauces, braises — better than dishes where raw texture matters.
Substituting in a recipe
The common question is how much dried to use where a recipe calls for fresh. Divide the fresh weight by the ratio: 9 oz of fresh mushrooms is about 2 oz dried; 4.4 oz of fresh vegetables is about 2 oz dried.
Then remember the liquid. Rehydrating in the dish rather than separately means the water they absorb has to come from somewhere — a stew with dried vegetables added straight in needs more liquid than the same stew with fresh, or it tightens as it cooks.
Herbs are the exception at 1.2×, and the usual guidance for herbs is by flavour rather than weight, since drying concentrates them: substantially less dried than fresh by volume.
Method matters as much as ratio
- Hot water is faster; cold or room-temperature is gentler and generally better for texture where you have the time.
- Long soaks belong in the fridge, not on the counter. Rehydrated food is no longer dried food — its water activity has risen and it needs treating as a perishable ingredient again.
- Keep the soaking liquid for mushrooms and most vegetables; strain it if there is grit.
- Jerky for stewing is a different job from eating jerky — it goes into the pot and softens as it cooks rather than being soaked first.
Why the ratios differ so much
Mostly structure. Mushrooms are porous and collapse dramatically, so they have a great deal of space to refill. Herbs are thin and largely made of the parts that do not rehydrate. Fruit retains sugars that hold some water even when dried, so it starts closer to its rehydrated weight.
Knowing that makes the numbers memorable rather than arbitrary, and it predicts reasonably well for foods the calculator does not list.
Rehydrated food is perishable again
The point worth restating on its own. Drying makes food shelf-stable by removing water; putting the water back removes that stability entirely.
So rehydrated ingredients are handled like fresh ones: refrigerated if not used promptly, not left soaking on the counter for hours, and not returned to the store cupboard. A long soak belongs in the fridge for exactly this reason.
The soaking liquid is an ingredient
For mushrooms especially, a large share of the flavour ends up in the water — which is why the 4.5× ratio matters twice: it tells you how much liquid to expect to reclaim as well as how much the mushrooms will take.
Strain it if the food was gritty, and use it in the dish. Discarding it throws away most of what the drying concentrated.
When not to rehydrate at all
Plenty of dried foods are better used dry. Herbs go in as they are. Dried fruit is often better chopped into a dish than soaked. And jerky intended for eating is not a rehydration case at all — the separate stewing ratio exists because that is a different use.
The calculator's ratios describe what a food can absorb, not what it should always be asked to.
